On November 26, 2025, Aiii House Saigon hosted “XIN CIAO! Four Hands Dinner”, a one-night-only collaboration between Chef Alain Pham of Aiii House and Chef Alessio Rasom of Si Dining in Da Nang. The evening brought together two culinary perspectives – Vietnamese sensibility and modern Italian technique – in a refined and contemporary dialogue on the plate.

Si Dining, recognized as MICHELIN Selected and awarded the Michelin Service Award 2024, is known for its elegant Italian cuisine crafted with Vietnamese seasonal produce. Chef Alessio Rasom, whose career includes experience across several Michelin-starred kitchens in Europe, brings a cooking philosophy that values emotion, craftsmanship and a deep respect for locality.

For this special dinner at Aiii, the two chefs co-created an exclusive Viet–Italian set menu, blending meticulous Italian methods with Vietnamese herbs, spices and a lively sense of place. Paired with selected Italian wines, the menu unfolded as a multi-course journey that highlighted both contrast and harmony – a meeting point between intuition and precision, heritage and modernity.

The event was fully booked, marking another meaningful moment in Aiii House Saigon’s ongoing series of curated chef collaborations, and offering guests a memorable pre-festive dining experience where two culinary cultures converged with sincerity and finesse.
