Aiii House Saigon x Ōre Bangkok

A Two-Year Anniversary Collaboration with Chef Dimitrios Moudios

On July 11, 2026, Aiii House Saigon marked its two-year journey with an exclusive collaboration between Chef Alain Pham and Chef Dimitrios Moudios of Ōre Bangkok.

Based in Bangkok, Ōre has quickly established itself as one of the region’s most distinctive new dining destinations. Recognized by the MICHELIN Guide Thailand with the Opening of the Year Award 2025, the restaurant is known for its intimate format, minimalist atmosphere, and a culinary philosophy shaped by clarity, restraint, and elemental technique. Its approach centers on Thai ingredients, selected produce, and a quiet dialogue between water, fire, and time.

At Aiii House Saigon, this philosophy found a natural point of exchange with Alain Pham’s own culinary language, one rooted in memory, cultural identity, and contemporary Vietnamese expression. The collaboration was conceived not as a meeting of two styles in contrast, but as a shared table where ideas, techniques, and emotions could move freely across borders.

In the days leading up to the dinner, Dimitrios, Alain, and the Aiii team explored the morning markets and local rhythms of Saigon. These conversations with place became part of the evening’s foundation, allowing the menu to draw from the city’s textures, produce, and everyday energy.

The dinner unfolded as a one-night-only experience, bringing together two chefs with different trajectories but a similar belief in precision and sincerity. Rather than spectacle, the evening favored attention to detail, quiet gestures, and the kind of culinary exchange that can only exist in the moment it is served.

As the night came to a close, the atmosphere remained around the table. Glasses were still raised, conversations continued, and guests lingered long after the final course. For Aiii House Saigon, the collaboration was more than an anniversary dinner. It became a reflection of what the house has sought to build over the past two years: a place where food, memory, and human connection continue to meet.
