Alain Pham — Co-founder and Head Chef of Aiii — brings over a decade of experience from Michelin-starred kitchens in France and Europe. Trained at Le Cordon Bleu Paris and École Ducasse, Alain’s culinary voice blends classical technique with the rich emotional heritage of Vietnam.
Born in Saigon to a Vietnamese–French family, his first influences came from his grandmother’s rustic cooking. After years abroad, Alain returned home with the intention to redefine Vietnamese cuisine, not by changing it, but by listening deeply to it.
At Aiii, he leads a team of young, passionate talents to craft multi-layered menus where every element — from plating to storytelling — is intentional and heartfelt. His cuisine is not only technical; it is a dialogue between past and present, between identity and openness.
